Baked Potato Topping Ideas
Potatoes
Potatoes are planted mid to late May. We cut seed potatoes with a machine, and use a specialty planter to plant the potato pieces. During the growing season we cultivate and hill the potatoes in preparation of potato formation.
Early September
In early September the potatoes reach the desired size to be harvested and are then terminated to stop from growing too big. After the potato vines are dead, they are left for at least 2 weeks to allow the skin to "set", so they are not pealed during the harvesting process.
Harvesting
Then, they are windrowed and harvested, usually in early to mid October. They are then loaded into wagons, transferred into trucks, and hauled to the St. Ansgar warehouse to be unloaded.
Keeping it cool
Once in the potato bin they are slowly cooled to 40 degrees and kept at a very high humidity.
From farm to table
In the winter as needed, they are floated in a trench under the bin to the wash room, where they are washed, graded, and bagged. Now they are ready to head to your table!
